Chipotle Chile (Capsicum Annuum) powder (40 mesh) are made from grinding whole Chipotles, seeds and pod both. The Chipotle Powder is 100% pure t provide an authentic flavor. Chipotle Peppers are the familiar Jalapeno Chile, first smoked, then dried. There are many different beliefs regarding the difference between Brown and Mortua Chipotles. Our understanding is that the Brown Chipotles are the Green Jalapenos and the Moritas are the red, fully mature Chipotles. This gives them a unique, medium - hot smokey flavor which is popular in many Southwestern dishes. They have a deep brick reddish brown color. The word "Chipotle" translates to "Smoked Chile". Consider the Chipotle a 6.5 on a scale of 1-10 (10 being the hottest). Approximate Scoville heat units 5,000-10,000.

I love to use Chipotle Chilis in Adobo sauce, but it is messy to work with. The Chipotle Powder is great. You get the Chipotle flavor without the mess.
